Torquay's waterfront dining had settled into a predictable register, coastal-casual identities reaching for the same Mediterranean shorthand, rarely matched by the room itself.
ELA arrived with restaurateurs Jason and Gino Gugliotti, chef Ricardo Galindo of Tonka, and an architecturally considered fit-out that demanded an identity of equal weight.
Contemporary Greek cuisine grounded in old-school hospitality. Expression followed the interior — warm lime-washed plaster, oak and travertine, soft terracotta against deep Aegean blue, photography favouring table and hand over plated geometry.
ELA opened to immediate recognition as a destination, with Melbourne expansion underway within the year.
